Pasta from Gragnano

Between 8 and 16 September 2007 exquisite pasta dishes are offered at Opera restaurant at Park Hyatt Saigon , where Chef Michele Gulizzi and his culinary team will be preparing a wide variety of delights using unique pasta from Gragnano. Chef Michele will serve a menu of opulent pasta dishes, including Ruote with salad, tuna, mushrooms and pancetta; Spaghetti with artichokes, prawns and white wine; Pipe Rigate with swordfish, eggplant and mint; Farfalle with smoked salmon and a brandy-cream sauce; Zitoni with scallops and roasted peppers; tri-coloured Tortiglioni with pesto and sun-dried tomatoes; Vermicelli with a blue cheese sauce and walnuts; and Fettuccine with braised beef and red wine sauce. Prices range from US$10++ to US$14++ per dish.
